Salata de quinoa si fasole

Salata asta a fost gata azi dimineata, undeva intre un dus si cateva mailuri, si o sa fie perfecta pentru pranz. Plus ca e vegana, gluten free, light & healthy si toate alea. Si gata pe ziua de azi, ca sunt intr-o alergatura de nici nu stiu de unde sa incep. (Deci am avut scuza perfecta ca sa procrastinez putin si sa scriu randurile astea ;-)
 
INGREDIENTE

20 de minute, 1 portie

    • 50g quinoa rosie
    • 1 conserva de fasole alba
    • 1 legatura de patrunjel
    • 1 lingura de menta proaspata
    • 2 fire de ceapa verde
    • 1 varf de ienibahar
    • zeama de lamaie
    • ulei de masline
    • sare si piper proaspat rasnit

 

Intr-o cratita, pune quinoa cu apa si las-o sa fiarba aproximativ 15 minute, pana ce se umfla si se inmoaia. Quinoa retine multa apa, asa ca scurge-o cu grija dupa ce o gatesti.

Taie ceapa verde marunt, toaca menta si patrunjelul. Scurge conserva de fasole.

Intr-un bol incapator pune quinoa cu verdeata si fasolea. Adauga ienibaharul, amesteca, apoi stoarce putina zeama de lamaie, toarna uleiul de masline si potriveste-i gustul cu sare si piper proaspat rasnit.

Schimba lamaia cu lime, patrunjelul cu coriandru si ienibaharul cu chimion. You’re welcome!
